Here’s an easy recipe for Healthy and Delicious Blueberry Banana Muffins, lower in sugar and a mix of whole wheat and all purpose flour.

Explanation of Healthy vs. Traditional Muffins:
It’s a tough call to refer to something as “healthy” these days. I suppose “healthier” is a more accurate term. I love a good muffin that isn’t as much like cake that is full of sugar and fat. And one that has plenty of fresh fruit in it (like this one) is welcome too. A healthy muffin has reduced sugar and includes a good flour like whole wheat flour.
Ingredients Needed:
- low fat buttermilk
- light brown sugar
- unsweetened applesauce
- eggs
- mashed ripe bananas
- white whole wheat flour or regular whole wheat flour
- all purpose flour
- baking powder, baking soda and salt
- ground cinnamon and ground nutmeg
- blueberries

How to make Healthy Banana Blueberry Muffins:

- Preheat the oven to 400℉. Spray a 12 cup muffin tin with nonstick spray. You’ll have some extra batter though, so you can spray a second pan (3 or 4 cups) with nonstick spray, or make a few mini muffins instead.
- In a medium bowl, whisk together the buttermilk, sugar, applesauce, eggs and bananas. In a separate medium bowl, whisk together the flours, baking powder, cinnamon, baking soda, salt and nutmeg. Add the dry ingredients to the wet ingredients and carefully stir with a rubber spatula until all is just about combined. Carefully stir in 1 cup blueberries.
- Use an ice cream scoop or ⅓ cup measuring cup to portion the batter into the muffin cups. Sprinkle the tops of the batter with the remaining blueberries.
- Bake until a toothpick inserted in the center comes out clean, 20 to 25 minutes. Cool for a bit, and then eat!
Recipe Tips:
- Try adding another fruit in place of the blueberries. Try raspberries, chopped apple or even chunks of banana!
- It’s okay to use all purpose flour for the whole recipe instead of part whole wheat flour.
