Skillet Brookie

This Skillet Brookie is a combination of a brownie and a chocolate chip cookie baked together in a skillet. It’s the best of both worlds!

We’ve baked Brookie Bars before, but this idea (from Crazy for Crust Dorothy) is fabulous. We’ve done caprese chicken in a skillet and macaroni and cheese in a skillet too. But this is the first time we’ve made a skillet brookie.

If you’ve not yet had a skillet cookie, you need to try this one. Warm, gooey brownies with warm chocolate chip cookies baked into them. Added M&M’s just makes everything more fun and pretty.

Ingredients needed:

  • unsalted butter
  • white sugar
  • cocoa powder
  • eggs
  • vanilla extract
  • salt
  • all purpose flour
  • brown sugar
  • egg yolk
  • baking soda
  • chocolate chips
  • M&M’s

How to make a Skillet Brookie:

The complete, printable recipe is at the end of this post. Preheat the oven to 350 degrees F. Butter a 10-inch skillet.

The first step is making the brownie batter. To a large bowl, add the melted butter. Use a wooden spoon to stir in the sugar and cocoa powder until smooth. Stir in the eggs, vanilla extract and salt. Slowly mix in the flour. The batter will be thick. Spread the batter into the prepared pan. Bake for 8 minutes while you prepare the cookie dough layer.

Next, make the cookie dough. In a large bowl, stir together the melted butter, brown sugar and white sugar. Stir in the egg yolk, vanilla extract, baking soda and salt. Slowly stir in the flour. Stir in the chocolate chips.

Scoop tablespoons of dough and flatten between your (clean) fingers, then drop evenly over the brownie layer in the pan. It’s okay if some of the brownie shows through. Sprinkle with M&M’s.

Bake for an additional 23 to 28 minutes or until the cookie is golden on top. The brownie layer on the bottom will stay super fudgy.

Picture yourself digging into this amazing creation. I recommend spooning it out while it’s still rather warm. Then you’ll get the gooey brownie and steaming hot cookie, which is what is the very best thing about all of this. 

I’m not gonna judge you if you choose to just eat this one out of the pan. But it is rather good to share with others.

This skillet brookie is best served warm on a plate with a fork and vanilla ice cream melting all over it! We like to add more M&M’s on top. Enjoy!
