Sausage and Corn Chowder

- 16 ounces smoked sausage, sliced thinly
- 1 medium onion, peeled and chopped
- 4 cups water
- 3 cups diced red potato
- 2 tablespoons finely chopped fresh parsley
- 1 tablespoon finely chopped fresh basil
- ¾ teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- One 15.25-ounce can whole kernel corn, drained
- One 14.75-ounce can cream-style corn
- One 12-ounce can 2% evaporated milk
In a large soup pot, brown the sausage and onion over medium heat. Add the water, potatoes, parsley, basil, salt and pepper. Bring to a boil. Reduce heat to simmer, cover and cook for about 15 minutes, or until the potatoes are tender.
Add the corn and milk, and heat through about 5 minutes.
