  • In a medium bowl, whisk together the flour, baking powder and salt.
  • In a large bowl, use an electric mixer on medium-speed to combine the butter and sugar until light and fluffy, about 3 minutes. Add the eggs, one at a time, beating well after each addition. Beat in the lime zest, lime juice and lemon juice, then beat in the food coloring. Reduce the mixer speed to low and gradually add the flour mixture, beating until just combined. Cover the bowl with plastic wrap and refrigerate the dough until firm, about 45 minutes.
  • Preheat the oven to 350℉. Line 2 baking sheets with parchment paper. In a small bowl, combine the powdered sugar and sanding sugar. Roll tablespoonfuls of dough into balls and toss in the sugar mixture to coat. Place the cookies 2-inches apart on the baking sheets.
  • Bake until the cookies are puffed and cracked on top and golden around the edges, 18 to 20 minutes. Remove the pans from the oven. Let the cookies cool for 5 minutes on the pans, and then use a spatula to transfer the cookies to racks to cool completely.
