Instructions

  • Line a baking sheet with parchment paper.
  • Add the chocolate chips and coconut oil to a glass bowl. Microwave in short bursts until the chocolate has melted and stir until smooth.
  • Pour most of the chocolate onto the parchment paper and spread it into a rectangle. Top the chocolate with raspberries, blueberries and almonds. Press down lightly with your hands to adhere.
  • Scrape the rest of the chocolate into a zip baggie or small piping bag. Snip the corner of the baggie and pipe more chocolate across the top of the berries. Sprinkle flaky sea salt on top.
  • Put the baking sheet in the refrigerator or freezer to set the chocolate. Once set, you can take it out and break the big piece of chocolate bark into smaller chunks. Alternately, you can cut it into neat pieces. Store in the refrigerator or freezer.

Notes

  • Be sure to pat the berries dry before adding them to the chocolate so excess moisture doesn’t affect the texture.
  • Toasting the almonds adds extra crunch and flavor.
  • Store bark in the refrigerator or freezer and place parchment between layers to prevent sticking.
