Spinach Lasagna Roll Ups

  • Preheat the oven to 375℉.
  • Cook the noodles according to package instructions; drain and lay out the noodles on a large cutting board.
  • Meanwhile, in a large bowl, combine the spinach, cheeses, eggs and salt/pepper.
  • Pour 1 cup of the marinara sauce into an ungreased 13x9-inch baking dish. Spread ⅓ cup of the cheese mixture on top of each noodle; roll up and place the rolled lasagna noodle over the sauce., seam-side down. Top with the remaining sauce. Bake, covered, for 20 minutes. Uncover; bake until heated through, 5 to 10 minutes longer.
  • Top with Parmesan and parsley before serving, if desired.
