This Blueberry Buckle recipe includes a delicious blueberry cake baked with a crumbly, buttery cinnamon topping.
This recipe is super easy to make. Grab some fresh blueberries to make this amazing blueberry buckle! You can use frozen blueberries if fresh are not available to you, but fresh will always be best. Buckle can be eaten as a coffee cake for breakfast or an afternoon snack. Or you can serve it up as a dessert as well.

PREPARE THE BUCKLE:

Bake for 50 to 60 minutes, or until golden brown. Let your blueberry buckle cool for at least a few minutes before you cut it into slices.

Blueberry Buckle
Ingredients
BUCKLE:
- 2 cups all purpose flour
- 2½ teaspoons baking powder
- ¼ teaspoon salt
- ½ cup shortening
- ¾ cup granulated white sugar
- 1 large egg
- ½ cup milk
- 2 cups fresh blueberries (frozen can be used too)
TOPPING:
- ½ cup all purpose flour
- ½ cup granulated white sugar
- ½ teaspoon ground cinnamon
- ¼ cup (½ stick) butter
Instructions
- Preheat the oven to 350℉. Spray an 8x8 or 9x9-inch pan with nonstick spray.
PREPARE THE BUCKLE:
- In a medium bowl, whisk together the flour, baking powder and salt.
- In a medium bowl, use a hand mixer to combine the shortening and sugar- beat on high speed until light and fluffy. Beat in the egg. Add the dry ingredients and milk alternately to the egg mixture; beat until smooth after each addition. Spread the batter into the prepared pan. Sprinkle the blueberries on top.
MAKE THE TOPPING:
- In a separate bowl, combine the flour, sugar and cinnamon. Using a pastry blender, cut in the butter until the mixture resembles coarse crumbs. Sprinkle the topping over the blueberries.
- Bake for 50 to 60 minutes, or until golden brown. Serve warm (with a scoop of vanilla ice cream, if desired).
