Strawberry Almond Salad with Poppyseed Dressing

This easy-to-make Strawberry Almond Salad is definitely one to try this summer.

The salad itself is simply a mix of salad greens, fresh strawberries and crumbled feta cheese. What makes it special is the poppy seed dressing and the sugared almonds. This is one salad that you might want seconds or thirds!

🛒 Ingredients Needed for Poppy Seed Dressing:

  • extra virgin olive oil
  • white wine vinegar
  • granulated white sugar
  • dijon mustard
  • onion powder, garlic powder, salt and pepper
  • poppy seeds

★ How to make Poppy Seed Dressing:

In a medium bowl or shaker jar, combine all ingredients for the dressing except poppy seeds. Whisk (or shake) well. When it is nicely combined, stir in the poppy seeds. The dressing may be stored in the refrigerator for up to one week.

💡 How to make Sugared Almonds:

In a small skillet, heat the sugar over medium heat until it begins to melt. Add the almonds to the pan and toss rapidly until the sugar coats all of the almonds and the almonds are lightly browned. Pour them out onto a glass dish and separate almonds with a fork. Cool until hardened and break into pieces.

✏️ Assemble the Strawberry Almond Salad:

To a salad bowl, add the lettuce and strawberries. Then toss with desired amount of poppyseed dressing. After it has been tossed, then gently toss in the almonds and feta cheese. Serve immediately.

✔️ Tips and Substitutions:

  • Use different berries! Try a combination of fresh berries- whatever is on sale!
  • Crumbled blue cheese or crumbled blue cheese may be used in place of the crumbled feta cheese.
  • If you don’t want to make your own dressing, it’s okay to use a store bought dressing instead.
