In these Spinach Lasagna Roll Ups, traditional, cheesy ricotta filling is rolled up into long lasagna noodles and baked with marinara sauce and cheese until hot and bubbly. It’s an easy way to enjoy lasagna. This is a viral dinner recipe that is a family favorite!

These pasta pinwheels are less time consuming to make than a traditional lasagna. They’re easy to make. You can get the family involved in rolling the noodles, if you’d like. It’s a fun way to eat lasagna!

Ingredients Needed:
- Lasagna Noodles: You’ll need a box of lasagna noodles (not the no-bake variety).
- Spinach: Look for frozen chopped spinach.
- Ricotta Cheese: Use skim or whole ricotta.
- Mozzarella Cheese: You’ll need shredded mozzarella cheese.
- Parmesan Cheese: Look for grated (not shredded) Parmesan cheese.
- Eggs: This is the binder for the filling.
- Salt and Pepper
- Marinara Sauce: Bottle marinara sauce is just fine. Use your favorite brand.

How to make Easy Spinach Lasagna Roll Ups:

- Preheat the oven.
- Cook the noodles according to package instructions. Drain the noodles and lay them on a cutting board to dry.
- Combine the filling ingredients (ricotta cheese, mozzarella cheese, Parmesan cheese, eggs and salt/pepper).
- Add some of the marinara sauce to a 13×9-inch dish.
- Spread some of the filling on a lasagna noodle, roll it up.

Set the rolled up lasagna noodles seam-down into the baking dish. Pour the remaining marinara sauce on top. Bake. You can sprinkle a little Parmesan and parsley on top for serving.

Recipe Tips:
- It’s a good idea to make a few extra lasagna noodles in case of breakage.
- Add oil to the pasta water to prevent the noodles from sticking to each other.
- Make sure the noodles are dry before you spread on the filling to roll.
- Drain the spinach well by squeezing it dry. You don’t want the extra liquid in the filling.
- Consider adding garlic, basil and/or red pepper flakes to the filling.
- This is an easy lasagna roll up recipe with spinach (a meatless lasagna), but it you can certainly use meat sauce, if you’d like.

Make Ahead and Storage Instructions:
It’s okay to make the filling ahead of time, and assemble later. You can also prepare the whole thing, cover with plastic wrap and refrigerate and bake later (same day). I don’t recommend freezing these lasagna roll ups. Store leftovers in a covered container in the refrigerator for up to 4 days.
