It’s so easy to make cookies that start with a mix. Our peanut butter brownie cookies recipe starts with a mix, and that’s always been a very popular recipe. And our cake mix snickerdoodles are a really simple, delicious recipe too. These fudgy mint cookie are a great cookie for the holidays. They’re easier to make than peppermint brownies, and they’re just as amazing too!

🛒 Ingredients Needed:

  • box devil’s food cake mix
  • salted butter
  • eggs
  • water
  • powdered sugar
  • chocolate covered thin mints

✏️ How to make Fudgy Mint Cookies:

  1. Preheat the oven to 375℉. Line baking sheets with parchment paper.
  2. In a large bowl, use an electric mixer to combine the cake mix, butter, eggs and water to form a soft dough. Shape the dough into 1-inch balls; roll in powdered sugar. Place the cookie dough balls 2-inches apart on the prepared baking sheets.
  3. Bake for 8 to 10 minutes, or until set. Immediately press a thin mint into the center of each cookie.

Cool the cookies on the baking sheets for a couple of minutes before moving them to a wire rack to cool.

➡️ Tips and Substitutions:

  • Take care to look for a cake mix that is 15.25-ounces. Some of the companies have started to reduce the ounces!
  • Look for thin mints in the candy aisle at your market. Don’t use Girl Scout Thin Mint cookies!
  • Try pressing a peanut butter cup into the middle of each cookie instead of a thin mint.

✔️ How to Store:

Store cooled fudgy mint cookies in an airtight container at room temperature for up to 4 days. If you stack the cookies, make sure you put a piece of parchment paper in between the layers so the cookies don’t stick together.

You can freeze these cookies too. Place cooled cookies in a freezer bag or well-sealed container and freeze for up to 2 months.
