You will only need four main ingredients to make this easy ice cream sandwich cake, and the prep time isn’t more than about 15 minutes. You don’t even have to be a baker to make this cake! Kids and adults will both love this super simple crowd pleasing dessert.
What is an Ice Cream Sandwich Cake?
It’s an ice cream cake (an icebox cake) that is made of layers of ice cream sandwiches, caramel sauce and chocolate sauce. It’s “frosted” with whipped topping. Other goodies can be sprinkled on top.

Ingredients Needed:
- Ice Cream Sandwiches: You’ll use regular, old fashioned ice cream sandwiches for this recipe. You might remember them from childhood or the ice cream truck: two rectangular cakey cookies with vanilla ice cream sandwiched inside.
- Dessert Sauces: Use a jar of caramel sauce and chocolate sauce that you can find near the ice cream section in your market. Alternately, you can make homemade caramel sauce and homemade chocolate sauce (or hot fudge sauce).
- Whipped Topping: A tub of Cool Whip or another whipped topping brand is what you’ll need.
- Sprinkles (or something else!): We used rainbow sprinkles to top our easy ice cream sandwich cake, but there are so many other options (see below).

How to make an Easy Ice Cream Sandwich Cake:
On a plate, stack 3 ice cream sandwiches. Spread caramel sauce on top and then chocolate sauce. Add another 3 ice cream sandwiches on top of the syrups (then more caramel sauce and chocolate sauce). The last 3 ice cream sandwiches go on top, and then cover the whole thing in whipped topping. Sprinkle on your choice of topping. Freeze until firm. Slice and serve.

Suggested Ice Cream Sandwich Cake Variations:
- Use any flavor of ice cream sandwich that you’d like. Consider Neapolitan, cookies and cream, mint chocolate chip, chocolate or birthday cake flavors.
- We use caramel and chocolate sauce in this recipe, but feel free to use any other sauces that sound good to you. I suggest butterscotch sauce or salted caramel sauce.
- Ideas for toppings are endless. Imagine using chocolate sprinkles, pecans, peanuts (with maraschino cherries), crushed butterfingers, crushed Kit Kats, toffee chips, chocolate chips, chopped Oreos, M&M’s, chopped peanut butter cups or Reeses Pieces!
- It doesn’t take a long time to make this easy dessert, but don’t dilly dally. You want to put it together quickly so the ice cream sandwiches don’t begin to melt during the prep time.
- An ice cream sandwich cake is fun to make for a holiday too. Think red, white and blue sprinkles (or M&M’s) for 4th of July, pastel sprinkles or M&M’s for Easter…. you get the idea!

Recipe Tips:
- This recipe shows making the cake on its own without a pan. If you’d like to make it in a 9×9-inch pan instead, you’ll need 14 ice cream sandwiches. If you use a 9×13-inch pan, you’ll need 24 ice cream sandwiches.
- Ice cream sandwiches aren’t very expensive, and you can certainly buy the generic brand at your market. But some people might like to buy a better brand to improve the flavor of the ice cream sandwich cake.
- Thaw your Cool Whip in the refrigerator. If you let it sit at room temperature to thaw, it tends to get runny.
- Make sure you prepare this cake at least a couple of hours in advance of serving. It will need time to become nice and firm in the freezer.
- Although I suspect that there will not be any leftovers, you can keep this cake (wrapped in plastic wrap) in the freezer for up to 1 week.
- If your ice cream sandwich cake has been frozen for a long period of time, you’ll want to remove it from the freezer about 20 minutes before serving and let it sit at room temperature to soften up a bit. It will be easier to slice.
- Individual servings can be drizzled with more caramel and chocolate syrup, if desired.
