Pigs in Blankets

This is an updated version of Pigs in Blankets wrapped in puff pastry and dusted with Everything Bagel Seasoning, served with mustard dipping sauce.

You’ve tried pigs in blankets before, right? Sometimes they’re hot dog-sized, wrapped in croissant dough and baked. Kids usually like them served with a little ketchup. This “grown-up” version is meant to be served as an appetizer. They’re wonderful dipped in a simple mustard sauce (recipe included here). Everyone goes nuts over these little piggies!

This recipe comes from the cookbook: One Hour Comfort by America’s Test Kitchen. These are quick and easy recipes, and I would call it modern comfort food. Ingredients needed:

  • puff pastry
  • egg
  • cocktail franks
  • Parmesan cheese
  • Everything Bagel Seasoning
  • freshly ground black pepper
  • mustard
  • cider vinegar
  • brown sugar
  • ketchup
  • Worcestershire sauce
  • Tabasco sauce

How to make Pigs in Blankets:

  1. Adjust the oven rack to the middle position, and heat the oven to 400°F. Line a rimmed baking sheet with parchment paper. Unfold the puff pastry on a lightly floured counter and roll into a 12×9-inch rectangle with the short side parallel to the edge of the counter, flouring the top of the dough as needed.
  2. Using a sharp knife or pizza wheel, trim the dough down to a 12×8-inch rectangle. Cut the dough lengthwise into eight 1-inch strips. Cut the dough crosswise at three 3-inch intervals. You should have thirty two 3×1-inch dough strips.
  3. Lightly brush 1 row of dough strips with egg wash. Roll 1 frank in each dough strip and transfer the bundle, seam-side-down, to the prepared sheet. Repeat with the remaining dough strips and franks, spacing the bundles ½-inch apart.
  4. Combine the Parmesan, bagel seasoning and pepper in a bowl. Working with a few bundles at a time, brush the tops with egg wash and sprinkle with the Parmesan mixture. Bake until the pastry is golden brown, about 23 minutes.

While the pigs are baking, you can make the mustard sauce. Just add all of the mustard sauce ingredients to a bowl and whisk to combine.

Let the pigs cool on the baking sheet for 10 minutes.

I like the puff pastry better than the traditional croissant dough for making pigs in blankets. It has a flakier, crisper texture. And the Everything Bagel Seasoning is a nice touch too. That (combined with Parmesan cheese) gives them a delicious pop of flavor.

Everything Bagel Seasoning has become a popular topping, and it can be found in your market’s spice aisle. Trader Joe’s carries it too.
